Ingredients
225g (8 oz) of Be-Ro Self Raising Flour
100g (4 oz) of caster sugar
100g (4 oz) of butter or margarine
1/2 lemon, grated rind and juice
1 medium egg, beaten
14 boiled sweet

Method
Step one
Heat oven to 180℃, 350℉, Gas Mark 4. Grease 4 baking trays.
Step two
Mix flour and sugar, rub in fat.
Step three
Add lemon rind and juice and sufficient egg to make a stiff dough.
Step four
Roll out half the dough thinly, cut into 7.5 cm (3 inch) rounds. With a star cutter cut out the middle of each round and place on baking tray. Re-roll spare dough. Make a hole at the top of each biscuit with a skewer to thread the cotton through.
Step five
Bake for about 7 minutes. Place a boiled sweet in the centre of each biscuit and bake for a further 4 minutes until the sweet has melted. Leave to stand for 1 minute, then carefully remove from tray and leave to cool on a wire rack. Hang by a window.
