Potato Scones Makes 12  

450 g (1 lb) floury potatoes peeled and cooked
1 x 2.5 ml spoon (½ tsp) salt
50 g (2 oz) butter
100 g (4 oz) Be-Ro Self Raising Flour

1 Mash potatoes, add salt and butter and flour to give a stiff mixture.
2 Turn out on to a floured surface, knead lightly and roll out to a thickness of 1 cm (½ inch).
3 Cut into triangles and cook on a hot greased griddle for 4-5 minutes on each side. Serve hot.
