| Potato Scones |

| 450 g (1 lb) |
floury potatoes peeled and cooked |

1 x 2.5 ml spoon (½ tsp) |
salt |

50 g (2 oz) |
butter |
|
100 g (4 oz) |
Be-Ro Self Raising Flour |

Mash potatoes, add salt and butter and flour to give a stiff mixture. |

Turn out on to a floured surface, knead lightly and roll out to a thickness of 1 cm (½ inch). |

Cut into triangles and cook on a hot greased griddle for 4-5 minutes on each side. Serve hot. |
